This May, The Abu Dhabi EDITION invites discerning diners to a one-of-a-kind collaboration at Oak Room, its award-winning signature steakhouse. On May 23 and 24, from 6:00 PM to 11:30 PM, Chef Giovanni Ledon of Akira Back Dubai and Chef Fernando Tapia of Oak Room will join forces for a bold, multi-sensory dining experience that blends modern Asian flair with refined European technique.

Chef Giovanni Ledon, Chef de Cuisine at Akira Back Dubai, brings a rich culinary pedigree shaped by his upbringing in Las Vegas and over a decade of experience working with some of the most celebrated names in the industry. Having trained under Chef Bobby Flay at Mesa Grill and later under Chef Akira Back at Yellowtail in the Bellagio Hotel, Chef Ledon developed a deep understanding of Japanese-Korean flavors, while infusing them with Latin American influences drawn from his own heritage. Now at the helm of Akira Back Dubai, he champions Chef Akira’s philosophy of viewing food through a fresh lens—balancing creativity with consistency, and elevating every dish with precise technique and intention.

Chef Fernando Tapia, Oak Room’s Chef de Cuisine, is known for his ingredient-led philosophy and his modern approach to the classic British steakhouse. With a deep respect for seasonality and provenance, Chef Tapia brings exceptional finesse to every plate, reimagining traditional dishes with a contemporary sensibility. His culinary journey spans globally renowned kitchens and has earned him recognition for pushing boundaries while staying grounded in the essence of timeless flavors.

Together, these two distinct voices in the culinary world will present a thoughtfully curated menu that celebrates contrast and harmony—Asian-inspired daring meets European precision, tradition meets innovation, and fire meets finesse.

Hosted at Oak Room, which has become synonymous with elegance and epicurean craftsmanship in Abu Dhabi, this two-night collaboration continues the EDITION Hotels’ commitment to spotlighting international culinary talent and immersive dining experiences.
