From exclusively using San Marzano tomatoes to importing artisanal Italian cheeses, Monno’s pastas aim to deliver a nostalgic journey of Italy’s cherished culinary traditions. From the dough to the sauce, everything is made in-house at Monno using the all-Italian fresh ingredients, with different options available throughout the year in accordance with the seasonality of produce.
Shaped by hand, Monno’s must-try pastas include spaghetti alla chitarra dressed in an aromatic beurre blanc sauce with lemongrass and shallots, generously topped with Oscietra caviar, and the equally delicious ravioli al tartufo – homemade ravioli with buffalo ricotta filling and Parmigiano Reggiano sauce, finished with fresh truffle.
A modern take on the much-loved lasagna is a sure-fire crowd-pleaser, as is the gnocchi sorrentina in a homemade cherry tomato sauce with buffalo mozzarella, Parmigiano Reggiano and fresh basil, and Chef Federico Bartoli’s classic take on alfredo made with fusilloni in an artisanal butter with red cow Parmigiano Reggiano sauce and dried juniper.
