Rise and shine highlights for plant-based mums to start the day with this Mother’s Day include a vegan take on a breakfast classic, ‘The Benedict’, with vegan poached egg, hollandaise, avocado and pico de gallo on toasted sourdough, plus the ‘Chocolicious Açai’ bowl topped with banana, chocolate brownie, pomegranate and nut-ella.
For lunch or dinner, the ‘Car-neat-as Tacos’ with shredded king oyster mushrooms, coriander, and onion salsa, topped with avocado cream in a corn tortilla are sure to go down a treat, as are the ‘Empanadas’ featuring a corn shell, hibiscus and tofu filling, guajillo, avocado cream, and pico de gallo.

The ‘La Burratina’ features Planet Terra’s signature homemade burrata with heirloom tomatoes and a balsamic glaze, while the ‘Papaya Salad’ presents a nutrient-rich bowl of grated papaya, carrots, avocado, cherry tomato and cucumber in a peanut dressing.
