Pierre’s TT restaurant by Pierre Gagnaire, located at InterContinental Dubai Festival City, has announced the launch of a new seasonal menu, designed by the renowned three-Michelin-starred chef, Pierre Gagnaire, in collaboration with Chef de Cuisine Mathieu Balbino. The new menu highlights a selection of seasonal ingredients, carefully crafted to bring forth both traditional and innovative elements of French fine dining cuisine.

Focus on Seasonal Ingredients and Culinary Techniques

The new menu at Pierre’s TT emphasizes a thoughtful selection of ingredients that are aligned with the autumn season. This approach allows for a natural exploration of flavours that complement the cooler climate, and it reflects Pierre Gagnaire’s philosophy of using seasonal produce to enhance the dining experience.

Another highlight is the Roasted Blue Lobster, served with frothy licorice butter, baby carrots, and vanilla-scented confit parsnips, accompanied by a traditional lobster bisque—an offering that celebrates the richness of classic French seafood. For those seeking a more traditional dish with a modern twist, the Sautéed Sweetbreads with Angelica paired with white polenta cake and confit tomatoes offers a unique balance of flavors through its unconventional pairings. To conclude the dining experience, the dessert menu features a Genoa Biscuit paired with lime-flavored fromage blanc ice cream and a refreshing Pineapple Mousse with passion fruit, offering a delightful contrast of citrus and sweetness that rounds off the meal perfectly.
