Beach Rotana is excited to announce the appointment of Germán Huerta as the new Head Chef of Trader Vic’s, the hotel’s vibrant French-Polynesian eatery and bar.
With over a decade of international culinary experience and a distinctive creative vision, Chef Germán brings a bold new energy to Trader Vic’s. His most recent role at Finz, Beach Rotana’s acclaimed seafood restaurant, saw him elevate the dining experience and secure the restaurant’s place in the Michelin Guide Abu Dhabi for three consecutive years.
Born and raised in Querétaro City, Mexico, Chef Germán trained at the IGES Gastronomy Institute before embarking on an international career that took him through kitchens in Mexico, the United States, and Canada. Throughout his journey, he developed a unique culinary identity – refined, expressive, and rooted in the bold flavours of his Mexican heritage. His cooking is defined by global sophistication, vibrant acidity, and layered spice, always executed with precision and creativity.
At Trader Vic’s, Chef Germán aims to reinterpret the restaurant’s beloved French-Polynesian concept while honouring its distinctive legacy. Guests can expect a refreshed menu featuring bold new dishes inspired by his travels and signature style. Highlights include flavour-rich Beef Cho Cho, delicious soy and ginger glazed Beef Skewers finished off table side over a flaming hibachi, luxurious Peking-style Duck with wild rice, shiitake mushrooms, toasted pine nuts and a sweet plum sauce, and delectable Chocolate Mandarin Pavlova, each thoughtfully curated to complement the restaurant’s tropical ambiance and renowned cocktails.
In line with the menu refresh, Trader Vic’s has also introduced enhancements to its interior decor, adding new wall finishes and decorative accents to enhance the venue’s laid-back island atmosphere.
Since its opening in 1994, Trader Vic’s at Beach has become an iconic nightlife and dining destination in the capital. With Chef Germán now leading the kitchen, the restaurant looks forward to an exciting new chapter defined by vibrant culinary experiences.
Trader Vic’s is open Monday to Thursday, 5pm to 3am, and Friday to Sunday, 1pm to 3 am.
