FINZ UNVEILS A NEW ERA OF SEAFOOD DINING AT BEACH ROTANA ABU DHABI WITH A BRAND-NEW CHEF AND MENU

Beach Rotana Abu Dhabi’s Michelin-selected seafood restaurant, Finz, has re-emerged with a bold new identity. Following a thoughtful revamp of both concept and culinary direction, the restaurant now invites guests to embark on a dining journey inspired by the ocean, from its surface to its deepest depths.

At the helm is Chef Luca De Santis, an accomplished culinary leader with more than 25 years of international fine dining and Michelin-starred experience. Born in Rome and shaped by kitchens across Europe and the Middle East, Chef Luca brings a philosophy of “fusion with purpose” to Abu Dhabi, blending flavours, cultures, and emotions with authenticity and craftsmanship.

“What drew me to Finz was the freedom,” Luca says. “The chance to create something original from the ground up, without being confined by expectations. Here, I can explore, innovate, and shape a dining experience that is truly unique.”

At Finz, Luca has introduced a contemporary dining concept inspired by the elements of the sea – its depth, waters, and temperatures. The menu captures this vision through dishes that balance precision with creativity. European-inspired plates include Scottish salmon with caviar beurre blanc and poached black cod with caper glaze and white asparagus, while Asian notes shine in creations such as coconut and kiwi oyster, kefir lime red snapper, and lobster tail with Japanese curry flavours and a striking passion fruit finish.

For Chef Luca, every dish is personal. “It’s not just about serving good food,” he says. “It’s about creating something meaningful – a story that guests can feel and remember long after they’ve left the table.”

More than a culinary showcase, Finz embodies a commitment to sustainability. Trusted suppliers ensure responsible sourcing, trimmings are repurposed into house-made ferments and vinaigrettes, and menus evolve seasonally to support local ecosystems while minimising waste.
