Details: For the one who already has a cellar of vintage bottles, here is an evening they will not see coming. On 16 January, from 7 PM onwards, Catch at St. Regis becomes the stage for Kagami Biraki, Japan’s treasured sake barrel ceremony symbolising harmony and new beginnings. Guests will share freshly poured sake before sitting down to a five-course menu, each course paired with sake by a visiting sommelier from Spinneys.
The menu highlights such as Hamachi Crisp with furikake and sudachi mayo, a Blowtorch Dynamite Roll of salmon and tuna, Cashew Nut Prawns with gochujang heat, and the star, 48-hour Miso Marinated Black Cod finished with miso yuzu sauce. Dessert arrives as Pearl de Catch, a coconut panna cotta with tapioca pearls and passion emulsion. A live Taiko drum performance adds theatre to an outdoor beachfront evening, uniting fine dining with cultural storytelling beneath the night sky.

Details: From January 5 to 31, Villa Toscana beckons guests to experience the ‘diamond of the kitchen, the Italian white truffle. Sourced from Italy’s truffle-rich regions, these gems take centre stage in a special à la carte menu. Diners can begin with creations such as Wagyu Carpaccio with truffle mayo and aged Parmesan, or Slow-Cooked Egg with Grana Padano cream and delicate shavings of white truffle. Hand-made Tagliolini with butter and truffle, or Risotto with scallops and cauliflower, offer a taste of northern Italy’s winter luxury, while the Slow-Cooked Stuffed Guinea Fowl with artichokes and pecorino makes for a refined finish. Details: On Friday, 23rd January, Villa Toscana hosts an exclusive Truffle Wine Dinner curated by Head Chef Vittorio. Presented through a special five-course menu celebrating white and black winter truffles, the evening begins with a salted cornetto topped with bacalao and black truffle.
The journey continues with a delicate crudo of langoustine accented with citrus and white truffle, followed by a rich risotto with roasted scallops and black winter truffle. The experience then culminates in a glazed veal tenderloin served with bone marrow, celeriac, and fragrant white truffle, bringing the evening to a luxurious close.
Dessert brings together chocolate, caramelised hazelnuts, matcha, and black truffle, rounding off the experience on a composed note. Guests may enjoy the menu on its own or with an optional wine pairing selected to complement each course.
