CarniStore, the UAE-born premium butchery and smokehouse, and Soul Kitchen, the restaurant-bar and cultural space known for its alternative programming and Lela cuisine, have partnered up to launch a limited-time dining collaboration this May. The collaboration will run every Tuesday for one month starting 5 May.
At the centre of the collaboration is ‘Carni Diem’, a set menu priced at AED 175, curated by Executive Chef Margarita Vaamonde. Designed exclusively for the series, the menu reflects a shared approach to quality ingredients and creative exploration.
“I love creating off-menu dishes, because it allows us to be playful and experimental outside of our regular menu. Working with suppliers like CarniStore who are renowned for their premium ingredients makes it easy to push boundaries,” says Chef Margarita.
The offering includes a signature burger made using CarniStore’s exclusive patty blend – combining chuck, short ribs and dry-aged brisket – delivering a rich, layered depth of flavour. The burger is accompanied by a side of Soul Kitchen fries and a chipotle mayo, and a playful dessert twist: mini churros drizzled with a salted caramel sauce topped with crispy bacon bits served with cinnamon-labneh ice cream.
Alexy Haidar, Group Beverage Manager at Soul Kitchen, has also created a bespoke cocktail for the occasion: the Fig Situation – a fig leaf-infused rum, citrus cordial, coconut-washed oolong tea, garnished with a lemon-thyme meringue.
The collaboration brings together CarniStore’s expertise in sourcing and butchery with Soul Kitchen’s platform for culture, food, and community.
