piehaus Unveils Counter Culture Edition 004 with Pure Harvest

Great food doesn’t begin in the kitchen.

It begins long before the dough is stretched, the oven is fired, or the first plate leaves the pass. It begins with the people growing the ingredients.

For the fourth edition of counter culture, piehaus is turning the spotlight away from the kitchen and towards one of its closest behind-the-scenes collaborators: Pure Harvest.

Created as an ongoing platform for unexpected collaborations, counter culture has previously brought together chefs from different culinary backgrounds to explore new ideas through handcrafted phyllo. This time, however, the conversation starts somewhere different—with the producer whose ingredients have quietly become part of both piehaus and 21grams since the very beginning.

For years, Pure Harvest’s produce have quietly found their way into some of the brands’ most-loved dishes. Guests may not have known the name, but they’ve already tasted the partnership.

Marking another first for the platform, the fourth edition of Counter Culture extends across both piehaus and 21grams, connecting the sister brands through one shared partnership while allowing each concept to interpret the collaboration in its own way.

Guests can enjoy two limited-edition creations available at both piehaus and 21grams.

The Summer Basket Phyllo Pie (AED 54) pairs hand-stretched phyllo with brown butter cream cheese, fresh Pure Harvest strawberries and blackberries, finished with delicate edible flowers for a vibrant celebration of the season.

Joining it is the Spanakopita Salad (AED 58), featuring roasted beetroot, Pure Harvest spinach and blackberries, crispy phyllo, goat cheese, candied pecans, sesame seeds and a bright strawberry dressing.

“Some of our guests may not realise they’ve already been enjoying Pure Harvest produce for years,” says Stasha Toncev, Founder of piehaus and 21grams. “It’s quietly become part of some of our most-loved dishes across both brands. counter culture gave us the opportunity to celebrate that partnership and shine a light on the people behind the ingredients. More than a limited-edition menu, counter culture continues to celebrate the relationships that shape every dish—from chefs and craftspeople to producers and growers. Because while flavours may bring people to the table, it’s the people behind them who make those flavours possible. As an added advantage, Pure Harvest is giving a free blackberry pack to the first 50 guests who order one of the counter culture items!

Available for a limited time at both piehaus and 21grams, the fourth edition of counter culture is a celebration of UAE-grown produce, thoughtful partnerships and the shared belief that exceptional food always begins with exceptional ingredients.
